The Milford Road corridor is where the best land activity action is in Fiordland, and the trick is timing it right. While the bus crowds are out on the water mid-morning, the road back to Te Anau is quietly yours - perfect for stopping at the hikes you skipped on the way in. Lake Marian is the standout for me. A hanging lake sitting in a granite bowl, decent uphill, proper effort. A 10 out of 10. Key Summit is another one worth your legs - it's part of the Routeburn and the views are massive.
Not everything here needs to be a mission. Lake Gunn is a 45-minute rainforest loop that the buses mostly skip, which makes it a lovely low-key stop. The Chasm is worth a look too - just know there's an unofficial route off the main track that gets you to the real good stuff, if you're comfortable on slippery rocks and tree roots. Take that on at your own will. And just after the Homer Tunnel, pull over at the unnamed natural amphitheatre viewpoint. It's not on Google Maps but it might be the best stop on the whole road.
For the seriously keen, Gertrude Saddle is a full-on unmarked route - steep, rocky, no hand-holding - but the views down into Milford Sound from the top are unlike anything else. The Kepler Track is also right there from Te Anau if you're after a multi-day. Sandflies are a real thing throughout all of this, so come prepared.
