South Island ▷ Marlborough ▷
Marlborough is a pretty decent spot for getting airborne, and the reason is obvious once you look at a map. The Sounds from above are genuinely stunning - all those drowned valleys and sheltered inlets that look like a jigsaw from the water look even more wild from the sky. Skydive The Sounds is the one that gets the most attention here, and it's easy to see why - there aren't many places in NZ where you freefall over coastline like that.
If skydiving isn't your thing, there are scenic flight options out of Picton including a floatplane service and helicopter flights with Windhawk Helicopters. The floatplane in particular suits this part of the world well - landing on water in the Sounds is a pretty fitting way to see it. Tandem paragliding is also on the menu through XS Altitude if you want something a bit more drawn out and floaty than a skydive.
